We went to the farmers market this weekend and picked up some radish and beetroot. The beet stalks and leaves were heavy and instead of throwing them away we decided to make a chutney out of them. It was just delicious. This same recipe will work for the radish as well.
1 tbsp chana dal
1 tbsp urad dal
Pinch of asofetida
1 tsp cumin seeds
1 tsp coriander seeds
2 tbsp ginger/garlic
1 tsp cayenne or chili powder
1 tbsp tamarind paste
Salt to taste
Beet stalk and leaves
Roast the chana dal, urad dal, cumin, coriander seeds and asofetida
Wash the beet stalk/leaves and add to above along with salt and chili powder
Saute for few minutes till it wilts a bit
Cool and blend with tamarind paste
