”Coconut” Chutney
Coconut chutney substitute. This is something I simply can’t live without for idli/dosas.
Needless to say I love Coconut Chutney beyond words. The thought of not eating this anymore with idlis/dosas almost made me give up on this diet before even starting it. So, I set about trying for a substitute and it WORKED!! Ram and I love this delicious recipe.
1 cup Roasted dalia
1 cup Frozen corn
1” Ginger
2 green chilies or 1 large jalapeno
1 tbsp lime juice or tamarind paste
1 cup water to blend
1/2 tsp coconut extract
1/2 tsp black pepper corns
For seasoning:
1 tsp black mustard seeds
10-12 curry leaves (Reduce if you find this too strong)
Salt to taste
Blend everything
Roast mustard seeds and curry leaves in a small saucepan (cover with lid so seeds don’t sputter out).
When you hear sputtering, pour mustards/curry leaves into the chutney bowl (without oil pouring is a breeze and no mess to clean up either. Heaven!!). Add a bit more coconut extract at this time and stir.
Enjoy this with Brown rice rava dosa
