Just returned from an almost month long vacation in India and have some new recipe ideas to add. There have been other appe recipes that we have tried before but this one is full of protein and super easy to make.
2 cups whole mung beans ‘
1 tbsp ginger paste (or fresh ginger)
2-3 green chillies
A pinch of asofetida
Salt to taste
Soak the beans in water overnight.
Blend all the ingredients using an immersion blender (Add a little water if it is too thick. It needs to be pourable into the appe pan - this is similar to the aebleskiver pan)
Pour the batter into the pan.
Cover and cook on very low fire for about 10-15 min. Turn the balls around. Cover and cook for another 10 min).
Serve with the coconut chutney
